Vegetable Biryani
Vasu, inthanga neenga keta Veg biryani :)
Ingredients:
Beans,Carrot,Peas - 1 cup
Basmati Rice - 1 tumbler
Onion - 1 big
Tomato - 1
Green Chilli - 1
Ginger Garlic Paste - 1 tsp
Mint leaves - a handful
Coriander leaves - same quantity as mint leaves
Turmeric powder - 1/4 tsp
Chilli powder - 1 tsp
Coriander powder - 2 tsp
Garam Masala - 1/4 tsp
Butter - 4 tbsp
Curd - 1/4 tumbler(same measure used for the rice)
Water - 1 and 3/4th tumbler(same measure used for the rice)
Salt - to taste
Cardamom - 2
Cinnamon - 2
Cloves - 2
Bay leaf - 1
Oil - 2 tbsp
Procedure:
Wash the Basmati rice and soak in water for 30 mins. Cut the onions, length wise,slit open the green chilli and cut tomatoes and beans,carrots into small pieces. Wash and cut the mint and coriander leaves.
Heat the cooker, put 2 tbsp of butter and let it melt, then add the oil and let it get hot. Then add the bay leaf,caardamom,cinnamon,cloves and fry for a minute. To this add the onions and green chilli and fry till golden brown..then add the ginger garlic paste and fry till the raw smell goes off. Add the tomato and cook till it becomes soft. Mint and coriander leaves goes in next...cook for a minute...then add the powders, and the veggies and fry for a minute...the veggies should mix well with the masala....Now to the 1/4 tumbler of curd add, 3/4th tumbler of water....pour this curd-water mix in the cooker...close the lid and let it cook for 1 minute....by this time, strain the water from the basmati rice( there shud be no water in the rice when u add it in the cooker). Now open the lid, add the remaining 1 tumbler of water and the basmati rice and salt....mix well amd taste and see.....the salt shud not be the right amount...it shud be slightly salty than the normal salt level....only then the finished product will have the right amount of salt...1 to 1 1/2 spoon shud be right. Now close the lid and once its starts steaming put the weight and in 2 mins, lift the weight and let it whistle 5 - 6 times, in intervals of 10 - 15 seconds...keep the cooker in simmer now for 10 mins exactly and turn it off. Once the steam sets down, open and add the remaining butter and mix slowly....You can skip this last step if u want. Serve hot with raita
