shrimp briyani by Nazreen

shrimp briyani

Ingredients:-

Shrimp-2lbs
Onion-2big(cut lengthwise)
Tomato-2big(finely chopped)
Cilantro & mint-a bunch each
Yogurt/curd-2cups
SALT to taste
Ghee/butter-2tspn
Oil
Red chili powder-according to taste
Shaan briyani masala-little
Cinnamon,Cardamon & clove-little

Method:-

1)In a big t-fal pot add little ghee/butter & oil.When the oil is heated add the cinnamon,cardamon & cloves...
2)Then add the onion & saute until golden brown,now add ginger garlic paste,saute until the onion smells goes or for 10mins.
3)Add tomato & nicely mix it with onions.
4)Now add mint & cilantro mix nicely.
5)Now add the shrimp,let it stand for 10mins.
6)Now add the spices(red chili powder & shaan masala) & SALT(be careful when u add SALT,because u need to add it for rice also),let it stand for 5 mins...then add the yogurt,nicely mix...if you want u can add little water..
7)let the shrimp cook for 20mins..

To make the rice:-

soak the rice for 1/2 hr.
In another pot add water & to it add SALT.
When the water is boiling add the rice..
Cook the rice 60% & strain the rice
Now add the rice to the cooking shrimp & put the flame to med-him...cover the t-fal pot with aluminum foil & then put the lid...cook like this until the rice is nicely cooked...

Yummy shrimp is ready...

Lamb/Chicken Briyani by Nazreen

Lamb/Chicken Briyani

Ingredients:-

Lamb-2lbs/Chicken-2whole chicken
Green Chillies,Red Chilie powder,Ginger & garlic paste,Cinnamon,cardamon,clove,turmeric,tomato,onion,cilantro,mint,lemon juice,garam masala,yogurt

Rice-4cups(water 1:1.5 is the ratio)

1)Heat the oil then add Cinnamon,Cardamon & Clove.Add 1/2 the onion & fry until pinkish brown.Then add the Garlic Paste(1/2tsp),Meat/Chicken,SALT,Turmeric.Cook for 10 mins

2)Slit Green Chilies,Cilantro & Mint,Red Chilie Powder.Let the water evaporate frm the meat.

3)Add Tomato(2big) & Yogurt(nicely blended).Add lemon juice,ginger paste(3/4-1tsp),garam masala powder(1/2tsp).Then add little water.Cook until the meat/chicken is done.

For rice:-

Soak the rice for 1/2hr.Heat the water & then add SALT,Cinnamon,Cardamon & Clove.

When the water is boiling add the rice.1/2 cook the rice.Then separate the water & rice

Add the meat to the rice.Cover with foil & put the lid.In high flame cook for 10mins

Lower the flame to medium or low cook for 15-20mins..

Oven biriyani by Rishada

Ingredients
Chicken legs - 1 kg
Basmati Rice - 750gm
Onions - 3
Green Chillies - 5
Bell peppers - 1
tomato - 2
tandoori powder - 1 tbsp
Chilli powder - 1 or 2 tbsp
salt to taste

Method:
Remove skin from the chicken legs and cut into reasonably big pieces. Marinate it in tandoori powder and salt for 30 min.
Cook rice until 3/4th done
Cut onions, tomatoes and bell pepper into small pieces. slit green chillies and salt it.
Preheat oven to 200F. Butter a tray and bake the chicken for 30 min. turn it over and keep for 10 more min.
Add in the tomatoes, onions and green chillies and bake for 10 more min.
Then add 2 cups water, chilli powder and salt and bake for 15 more min.
Then add the 3/4th done rice and mix in. then add bell pepper on top and bake for 10 min.
Remove the tray from oven after 5 min ir else the rice will dry.
Serve with boiled egg and onion raita

Idyappam Briyani by Nazreen

Idyappam Briyani


Ingredients:-

Lamb(with bones)/Chicken
Idyappam-1 packet or 8 Idyappam
Onion-4(medium sized)
Tomato-1(big)
Red Chilie powder-According to taste
Green Chilies-according to taste
Cilantro & Mint-1/2 bunch
Cinnamon, cardamom & clove-little
Yogurt-1/2cup whipped
Coconut Milk-1/2 tin
SALT

Method for cooking the lamb:

-Nicely wash the lamb & drain the water.

-In the pressure cooker,add oil,curry leaves saute the onion & then add ginger garlic paste,fry it until it becomes pinkish brown.

-Then add the lamb,SALT,Red chili powder,Yogurt.Nicely pressure cook it.Might be for 5-7 whistles.

-Once done,if there is water,make it like sukka.There must be no water.

Method for making the Idyappam Briyani:-

-Fry in oil cinnamon,cardamom & clove.Then add onion,ginger-garlic paste & nicely saute.

-Add the tomato.Add little water & cook the onion & tomato nicely.

-Now add Turmeric powder,green chilies.Cook for few minutes.

-Then add the coconut milk(1/2 tin) & make it solid.This must not be watery.

-Now add the cilantro & mint.

-Add the curry & Idyappam.(If frozen,take it frm the freezer microwave it for 2mins).

Idyappam Briyani is ready to eat...

Masi Pulao by Rishada

Masi is Maldivefish(dried) - so only for non-vegetarians - Had guests and they liked it.. and it is so easy to make - a rice-cooker rice recipe..

Ingredients
Shah Jeera
Rice
Veggies of choice (I used frozen)
Dried maldivefish
green chillie
salt to taste
red chilli flakes (red chilli ground coarsely)
onion
oil
juice of half lemon (optional)

Method
Heat oil in a vessel and add shah jeera, when it crackles add onions and fry till golden brown. then add green chillies, red chilli flakes (adjust both for spiciness), and add veggies and stir fry them.. Transfer the contents to the rice cooker, add rice, water, salt, maldivefish and cook..
Just before serving, add lemon juice. Doesn't require any side dish

Mutton Briyani by Nazreen

Mutton Briyani



Ingredients:

Lamb/Goat-1lbs
Onion-1big(cut lengthwise)
Tomato-1big(cut lengthwise)
Cardamon,cinnamon,clove-5each
Coriander and mint leaves-1bunch
Ginger-garlic paste-2tsp
Yogurt-1 1/2cup
SALT to tast
Ghee and oil
Green Chilies-according to karam u need
Red chilie powder-according to taste


Method"
1)In a pressure cooker add ghee and oil.Then add Cinnamon,cardamon and clove.
2)Then add the onion and saute until the onion turns golden brown.Now add ginger garlic paste.
3)Then add the tomato after the smell of ginger garlic paste is gone
4)Mix nicely that the onions and tomato becomes soft
5)Add a bunch of cilentro and mint...
6)Then add the meat and SALT(little),u need to add SALT for the Rice too
7)Then add yogurt and nice mix it with the meat
8)Pressure cook for 20mins

For the Rice:

3cups(1 cup of rice = 1 1/2 cup of water) of basmati rice.wash and drain the water and keep aside..
Then measure the pressured water(remaining water)(water frm the meat)and some water frm tap...Then add SALT and lemon juice little..
Put everything in rice cooker and YUMMY BRIYANI is ready...
