Vegetarian Drunken noodles recipe by Shubha Ravikoti
1 packet Wide Rice Noodles
4 tbsp vegetable oil
4 tbsp chopped garlic
1 small onions, chopped
1/2 green pepper, chopped
1/2 red bell pepper, chopped
1 cups cleaned and cut green beans (optional)
Juice of one lime
1/4 cup Sambal olek sauce
1/3 cup soy sauce
1/4 cup brown sugar, firmly packed
Few leaves of fresh basil
firm tofu cubed and pan fried.
Red pepper flakes (optional)
black pepper
1 teaspoon salt
Method : Cook the noodles as per the package. Simultaneously, in a large wok heat the oil and add the garlic and brown lightly. Mix well and immidiately add in all the veggies. Stir fry for few minutes.
Add the cooked noodles to this, along with the lemon juice, sauces, salt, soya sauce pepper, and sugar.mix well. (u can even mix these sauces n spices in a different bowl n then pour it on the noodles for a even spreading)
Add the tofu and the basil leaves. Stir fry well till it becomes a bit dry. Serve hot with any accompaniments..:)
you can add any veggies u want like brocolli, carrots, baby corn n so on..:)
