Karakkulambu (chettinad) by Shobana

Karakkulambu (chettinad)
Ingredients
Group I:
Onions-2, Brinjal-250 gms(slice both lengthwise), Garlic-8 flakes peeled, G. Chilli-3 slice lengthwise, Tomatoes-3 (chop finely), Oil-1 tbl spoon

Group II:
Tamarind extract-1 1/2 cup9extracted from lemon sized tamarind), Salt-1 1/2 teaspoon.

Group III:
Sambar powder - 2 tspns, Toamto-1 Sliced, Fresh coconut(grated)-1/4 cup,

Group IV:
Mustard seeds-1/4 tspn, Bengal gram dal-1 teaspoon, oil-1 teaspoon (mix and micro on high for 3 mins in closed bowl)

Method:
1. Mix grp I together and micro on high for 7 mins in closed bowl, stirring once-in-between
2.Add grp II and III (dilute with little water if necessary) and micro on med-high for 7 mins in open bowl stirring once-in-between.
3. Mix grp IV ingredients.
4. allow 4 mins standing time.

i made some changes in the above recipe, they are i used small onions and drumsticks and added less coconut and i microwaved for some extra time for the kulambu to boil,
