Potato stew by Anusha

Potato stew

Red Potatoes - 4 (Medium size)- cut in moderately big chunks
Carrots- 2 (cubed (little smaller than potato)
Peas - 1/4 cup
curry leaves
Onion - 1/2 (chopped big)
milk - 1/4 cup

To grind:
Coconut - 4 tbsp
Jeera - 1 tsp
Green chillies - 3
Ginger - 1 inch peice
Cloves - 3
Milk - 4 tbsp

grind it well without lumps.

Method:
This is a very rustic dish and hence none of the veggies need to be diced "beautifully" .thats why I like this recipe- I suck at cutting same size veggies!!
1. Heat oil in a kadai. add mustard seeds, curry leaves and onion

2. keep in sim and fry onion till soft- try not to make it brown

3. Add the potatoes and carrots, salt and add 1/4 cup milk and 3/4 cup water.

4. LET VEGGIES BOIL. WHEN POTATOES AND CARROTS ARE HALF DONE ADD THE PEAS.

5. when all veggies are 3/4 th done add the ground mixture and let it boil. add water accordingly. check for salt.

we have this for pancakes. it is so yummy and very simple to make. it will go well with dosa, idli, idiappam and chapathi too.

you can also substitute coconut milk (instead of milk and coconut separately. quickens the process!)
