Ingredients :
Brinjal - 5
Onion - 1 big
Coconut milk - 1 cup
Tamarind paste - 1/2 to 1 tsp how muchever u want
Mustard seeds : 1/2 tsp
Chilli powder : 2 tsp
Turmeric powder : 1/4 tsp
Water : 2 to 3 cups
Curry leaves - 5 to 6
Salt - As required
Method:
Cut the onion into small pieces and cut the brinjal only in the middle(X shape) how you cut for stuffed brinjal gravy.
In a tawa,add oil and put mustard seeds...let it crackle and then fry the onion and brinjal. After it has turned brown add turmeric powder,chilli powder.Saute for a while then add water.When the water starts to boil add the tamarind paste and salt.Let it cook for sometime.When u get the required consistency add the coconut milk and let it boil for 5 mins and then switch off by adding curry leaves.
This is my mom's recipe..very simple though
