Roasted veggie pasta by Anusha

It is a self-taught recipe..make your own alterations

Eggplants, carrots, green, yellow, red peppers, onions - all cubed and placed in a pizza sheet/ cookie sheet- spray pam / coat liberally with olive oil on top , sprinkle salt, pepper, Italian seasoning if you have. roast veggies till done in oven. turn veggies in between. you can also roast them stove top in flat saute pan..I think it takes longer.

Heat olive oil, add garlic and fry till garlic turns light brown - add the marinara sauce and let it heat up. add the roasted veggies into the pasta sauce.

Boil any short cut pasta (elbow/small shells/ fusilli) till aldente. mix pasta with sauce add parmesan cheese.

Alternatively you can mix pasta and sauce transfer to an baking pan, top it with little butter and shredded mozzarella and bake for crunchy top!
