South Indian Parotta by Kousalya

Maida- 1 cup
Dalta or Oil -3 spoon(if u use dalta ,u will get flaky parotta)
Baking soda -1/8 tsp or less
Water -little less than ½ cup

-Mix the baking soda with maida thoroughly ,then add oil then water and make it as chapathi dough .
-Just coat the dough with oil & keep it aside for 2 hrs . (konjam tharalamavae oil irukallam)
-Take the dough ,beat and mix the dough for 5 mins .
-Divide them in to equal sized balls.
-Take a ball and make it like chapathi as thin as u can . (do this in kitchen slab so that u can make a thin large sheet)
-If oil is not enough just spreed some oil on the maida sheet (thin chapathi) .make flits (kosuvam as in saree) it will now appear as long string ,take the sting by two hands and hold one end and roll the other end towards it and make it as wheel .
-Do the above procedure for all the balls . Just make sure the wheels are coated with oil.
-Heat the dosa tava spreed some oil .Take one wheel and prees it in to round parotta and place it in tava ,when one side is done flip around and cook the other side .
-When you made 3 -4 ,stack it and pat it on sides .
Serve the parotta with kurma/chalna :) ….
