Eggless sour cream coffee muffin/ cake
Ingredients
1/2 cup butter, softened
1 cups sugar
1 tbsp vinegar
1/2 cup sour cream
1/4 teaspoon vanilla extract
1 cups all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1/8 teaspoon baking soda
1 tbsp instant coffee powder
Pre heat oven to 350 ....
Take two bowls... in the first bowl add the butter and beat well, then add the sugar beat again then add the vinegar and beat then add the sour cream and vanilla extract and beat really really well..... in the second bowl bring all the dry ingredients and mix well finally add the wet ingredients to flour mixture and beat really well.... the batter will be thick ... u can spoon a scoop of raisins, chocolate chip or pecans at this stage its optional....
then spoon the batter into muffin cups or cake pan and bake for 20 mins... or until done....
