okra pulikulambu
okra - 25 nos, cut into 1 inch pieces
Onion - 1 cup, chopped
Garlic - 10
Tomato - 1 cup, finely chopped
Curry leaves - 1 sprig
Green Chilies - 2 nos, chopped
Red chili powder - 1 tsp
Tamarind paste - 1 tbsp
Sugar - 1/4 tsp (preferably Brown sugar)
Salt - 1/2 tsp
Oil - 1 tbsp
Gingelly oil - 2 tbsp
Fenugreek seeds - 1/2 tsp
Hing - a pinch
Method:
1) Heat oil in a pan, first shallow fry the okra till it becomes little crispy. Then keep it aside.
2) To the same pan with left over oil (or add more oil if you need) splutter fenugreek seeds followed by curry leaves, hing, onion, garlic & green chilies. Fry for 5 mins, then add tomatoes & masala powders, salt. Saute till oil oozes.
3) Then add tamarind paste & sugar. Add 1/2 cup water, cook on low flame & bring it to a boil. Then add fried okras. Cook for 2 more mins & done :)
Same for bitter gourd kulambu.
