Basandhi
A quicker and lazier alternative to Basandhi recipe is to heat half and half (can also use fat free half n half) until it just comes to a boil. Then add about 1/4 cup curd and keep stirring on a low flame (for abt 2 mins). You will see the milk forming small lumps. Switch off the stove and add a can of condensed milk.Add elaichi pwdr, nuts and saffron(optional).
If adding saffron, soak it for 10 mins in 1 tsp of warm milk and then add it. You can also omit it since the condensed milk will give it a great taste already !!
Keep this in the fridge for atleast 1 hr before serving. It tastes better when cold. I make this often at parties and its always a BIG hit !!!
On the whole, this recipe will not take more than 15 mins !!!
PS : Half and half is nothing but half cream and half milk. It always adds a very rich flavour to dishes like payasam, custard, alfredo etc. !!
